Brazilian Desserts: Easy Recipe for Quindim (Coconut Flan)

For Those Who Love Coconut.
Quindim (keen-deem) is a type coconut flan. It is one of Brazil's most popular desserts and usually served at bridal or wedding showers, birthday parties, holidays, and of course, bakeries. It is very yellow due to the high quantity of egg yolks used. Quindim is the perfect companion for a rich cup of coffee or espresso.
If you notice in the background of this photo, there are several mouth watering Brigadeiros and Beijinhos , which area also very popular Brazilian desserts.
QUINDIM (Coconut Flan)
1 c sugar (since I don't have a big sweet tooth, I use less: scant 3/4 cup)
1 c FRESH grated coconut (if fresh is unavailable, use unsweetened flaked coconut)
1/3 c coconut milk
8 egg yolks (beaten)
2 T butter
1 t vanilla extract
Preheat oven to 360 f.
1. Blend all ingredients thoroughly in a bowl.
2. Pour into individual molds that have been greased and dusted with sugar.
3. Fill a big baking pan with about 1/2 inch of water and place the molds inside the pan. Bake in the water pan until flan is firm and golden brown (45 - 60minutes).
4. Remove from oven, allow to cool and remove from molds. Place in paper cups before serving.
